the pibil was a resounding success the eyes and palates of my dinner guests. it looked and tasted really good. my dinner guests went home happy with a full belly.
some things i didn’t do:
the achiote paste called for two tablespoons of salt (all together: wow!), but i completely forgot to put it in there… honest. […]
