the pibil was a resounding success the eyes and palates of my dinner guests. it looked and tasted really good. my dinner guests went home happy with a full belly.

some things i didn’t do:

the achiote paste called for two tablespoons of salt (all together: wow!), but i completely forgot to put it in there… honest. nobody noticed or they didn’t say anything.

when i make this next time, i will need to cut the butt into smaller pieces. more like morsels instead of huge bites.

also, i may have to pick up a higher quality of tequilla. i’m heading down to the playa del lobo (i think that’s what its called), which is about forty miles south of rocky point. i’ll pick up some tequilla down there.

anyway, i’m available for parties if you ever need a slow-roasted pork cooked. give me about a days notice and roughly thirty bucks for meat a supplies.
